We are excited to share the secret recipe for one of our favorite vegan dishes: Spicy Vegan Couscous Royale!

This delicious dish is composed of fluffy couscous mixed with fresh garden vegetables and chickpeas, creating a flavorful and satisfying vegan meal.

It’s quite simple to make. You can follow these few steps at home to create those delightful memories.

What you will need

For the Couscous:

1 cup couscous
1 1/4 cups vegetable broth (or water)
1 tablespoon olive oil
Salt to taste

For the Spicy Vegetable Mixture:

1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 bell pepper (red or yellow), diced
1 zucchini, diced
1 carrot, diced
1 cup cherry tomatoes, halved
1 cup canned chickpeas, drained and rinsed
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (adjust to taste)
Salt and pepper to taste
1/2 cup fresh parsley or cilantro, chopped (for garnish)
Juice of 1 lemon

Let’s Get Cooking

Prepare the Couscous

In a saucepan, bring the vegetable broth to a boil.
Once boiling, remove from heat and stir in the couscous and olive oil.
Cover and let it sit for about 5 minutes, or until the couscous has absorbed the liquid.
Fluff with a fork and season with salt. Set aside.

Cook the Spicy Vegetable Mixture

Heat 1 tablespoon of olive oil over medium heat in a large skillet or frying pan.
Add the chopped onion and sauté for 3-4 minutes until translucent.
Stir in the minced garlic and cook for another minute until fragrant.
Add the diced bell pepper, zucchini, and carrot. Cook for about 5-7 minutes until the vegetables start to soften.
Add the cherry tomatoes and chickpeas to the skillet, along with the cumin, smoked paprika, cayenne pepper, salt, and pepper.
Stir well and cook for an additional 5 minutes until the tomatoes soften and the flavors meld together.

Combine and Serve

Add the prepared couscous to the skillet with the spicy vegetable mixture. Mix everything well until combined.
Squeeze fresh lemon juice over the top and give it a final stir.
Taste and adjust seasoning as needed.
Garnish with chopped parsley or cilantro before serving.

Serving suggestion
